Vegan Whipped Cream

Homemade whipped cream makes everything more special, so of course I had to veganize it. A from-scratch-whipped-cream-less life was not an option. And good news! This is so super easy.

1 can coconut milk (not the lite stuff)
1tsp corntarch
2 tsp sugar or 1 tsp agave

Chill the can of coconut milk for a good while and the separate the solid stuff on top from the liquid. Set the liquid aside for a smoothie or curry or something, but we don't want any of it in our whipped cream (or it won't be whipped at all). In an electric mixer or blender, beat the coconut cream (it should be good'n solid to start with) with the cornstarch and sugar until peaks form.

....that is.
